After being diagnosed with Celiacs Disease, my relationship with food drastically changed. Since then, I have spent many years accumulating wonderful recipes that I love and can safely eat. Below are many of my favorites, updated weekly with more information and links to the original recipe.
All recipes are (or can be) free of Gluten, Soy, Corn, Dairy & Eggs.

Massaged Kale & Sunflower Brickle Bowl

OK, the highlight of this bowl is most definitely the sunflower brickle and the bacon, obviously, the bacon. The sauce is also SO tasty and one you can adapt for SO many other bowls you make! So versatile and healthy, duh!

I’ve made quite a few adjustments to the recipe but this bowl is adapted from Brooke Clark and you can the find the recipe here!

Noted Changes:
- I added Chicken Thigh for a more hearty protein filled meal
- The sunflower brickle is pretty sweet so I don’t need the apple
- I trim down the honey, cause why not? I personally get enough sweet from fruit and chocolate, always chocolate.
- I rotate veggies based on season and what I’m in the mood for! The brickle and sauce go well with EVERYTHING!

Peanut Butter Banana “Ice Cream”

DELISH! Its incredible how much this tastes like REAL ice cream!!

1. Blend 2 frozen bananas
2. Add 1-2 tbs nut butter & continue until combined
3. Scoop and serve with your favorite toppings - Chocolate, berries, granola

It can be SO difficult to find solid asian style recipes and this one HITS THE SPOT! Very simple and SO tasty!

I LOVE crockpot recipes! They are EASY and make coming home so DELIGHTFUL! This one really surprised me and now is a GO-TO!

Orange Ginger Black Sesame Bowl

A yummy bowl of veggies and protein with an incredible Black Sesame Sauce!

I made the following alterations:
1. Chicken thigh instead of Tempeh
2. Brown Rice vs Quinoa - as quinoa is difficult to digest
3. Add varying veggies that call to you!
4. Coconut Aminos instead of Tamari - to avoid Soy

SO easy and definitely a snack thats ALWAYS in my kitchen ready to munch on!
NOTE: I double the nutritional yeast amount to make them more like a “Cheez-It.” Still mild, but oh so tasty!

Kung Pao Chicken

This recipe is NO joke! It is SO good, but not for the faint hearted. I went easy on the dried peppers (cut it in half), flavor was PERFECT, just spicy enough! But the real trouble is how our entire house was filled with SPICY! Eyes watering and throat clearing, kinda spicy. haha! We still love it though!

Pad Thai with Kelp Noodles

First Pad Thai recipe that I LOVE & can make at home with ease! I subbed out the cashew for peanuts, cause I’m old fashioned, ya know?

Note: Use any noodle you want, but I tried Kelp and loved them, SO LOW in carbs and also tasty. I find it best to keep them in a pan with the lid on and a little water to help them soften so they aren’t crunchy — then add them to the mixture.

Coconut Slaw   I found this recipe after discovering Media Noche in SF. I fell in LOVE with their coconut slaw and NEEDED it in my life! We top our tacos (fish, carne aside, pork, chicken etc) with this slaw and it adds another layer of FLAVOR heaven!  Note: I cut the recipe into a 3rd of what it calls for!
